This is interesting - the apostrophe use shows that the Man City team 'belongs' to Pep Guardiola or in other words, the Manchester City side that Pep manages rather than another City team. The same for Man United.Â
I suppose when we say Pep's City it means Manchester City under Pep Guardiola.

This is a different structure where "Man City" can go in front and behind.
