'on the break' is a phrase connected with counter attack. If a team is on the break they are counter attacking. In your example text, Everton have just had a corner and lose the ball, so Liverpool can counter attack quickly. Liverpool have been dangerous on the break all game ('a threat on the break').
Everton were trying to get an equaliser and only had 10 men. They took a change, a risk by pushing men forward. This is a gamble. They could score but they could also give the opposition an opportunity.
Lastly, backfires: this is a verb, to backfire, and is used to mean an original plan goes wrong and has the opposite effect. Everton gambled on scoring but Liverpool could hit them on the break and scored a second goal.
