The phrase 'go up the pitch' means to attack the other side/team but from a position of defence.
So, in this example, Liverpool are defending against West Ham and the attacker falls (goes down) in the penalty area and then Liverpool attack (go up the other end of the pitch). The other end of the pitch is the opposite end of the pitch. Other words we might use for this kind of action include break and counter.
